I always get to this time in Texas where I can’t decide if it’s spring or summer. Never mind. It’s definitely summer. It may be spring on the calendar, but we are having consistent highs in the 90s, and the pool is no longer chilly. We had a fairly mild spring, thankfully, but there’s no turning back now. The heat is here, and it’s time to keep the house cool and grill some summer meals!
You can adapt all of these recipes to make inside, of course. I don’t even own a grill! I’m seriously thinking about getting a grill pan, though. Maybe one like this. What do you think? Have you used a grill pan before? Is it worth it? I know it won’t have the charcoal taste, but can you get a good char on your meat and veggies?

Sunday: It’s still the weekend, so let’s start with a nice, traditional grilling pastime: burgers! I’ve yet to try an In-N-Out burger, but I’ve heard they’re the bomb. The recipe sure looks good. I’m digging the shaved onions mixed into the burger.

Monday: Let’s ease into the week with a super easy dinner. I used to make these a lot, and need to revisit them. Top them any way you want! You can make it a Meatless Monday, or load it with pepperoni. Knock yourself out.
Tuesday: Okay, you can spend a teensy bit more prep time, right? Not too much time, promise. You can prep the toppings while the steak is grilling and these yummy street tacos will be in your belly in no time. Taco Tuesday!
