I always get to this time in Texas where I can’t decide if it’s spring or summer. Never mind. It’s definitely summer. It may be spring on the calendar, but we are having consistent highs in the 90s, and the pool is no longer chilly. We had a fairly mild spring, thankfully, but there’s no turning back now. The heat is here, and it’s time to keep the house cool and grill some summer meals!
You can adapt all of these recipes to make inside, of course. I don’t even own a grill! I’m seriously thinking about getting a grill pan, though. Maybe one like this. What do you think? Have you used a grill pan before? Is it worth it? I know it won’t have the charcoal taste, but can you get a good char on your meat and veggies?
Whatever your method, here’s a week of summer-lovin’, grill-worthy recipes. Best enjoyed by the pool!
Sunday: It’s still the weekend, so let’s start with a nice, traditional grilling pastime: burgers! I’ve yet to try an In-N-Out burger, but I’ve heard they’re the bomb. The recipe sure looks good. I’m digging the shaved onions mixed into the burger.
Monday: Let’s ease into the week with a super easy dinner. I used to make these a lot, and need to revisit them. Top them any way you want! You can make it a Meatless Monday, or load it with pepperoni. Knock yourself out.
Tuesday: Okay, you can spend a teensy bit more prep time, right? Not too much time, promise. You can prep the toppings while the steak is grilling and these yummy street tacos will be in your belly in no time. Taco Tuesday!
Wednesday: This recipe looks SO GOOD to me, and I think I may have just fallen in love with compound butter. Have you made it before? What flavors did you do, and what have you used it for? Comment and let me know! (Oh, and grill a couple of extra chicken breasts– you can use them in tomorrow’s entree salad.)
Thursday: It’s salad time! This one looks amazing, and definitely filling enough to make it your whole meal. Picnic, anyone?
Friday: Friiiidaaayyyyyy!!! You made it. Time to stream a movie and veg for a bit. Maybe catch a game? Or toss a ball around in the backyard with the kids? How about a super quick meal and a little twist on a classic. BLT Ranch Hotdogs? Mind blown.
Saturday: Since I’ve had all of this time on my amazing Momcation, I’m going to let you eat every day this week! This chicken kabab recipe is quick and easy on the grill, with a yummy marinade. Plus, I still have all of that Tzatziki sauce from Costco to use up…
Your grill will need a vacation after this week, but your house will be cool and your tummy happy. Happy grilling!
